Ice wines are wines made from grapes that are left on the vines late, into the winter season and are harvested when frozen.

This creates a sweeter wine.

However because the grapes are harvested late there is always the chance that they can be left too long and become unusable, etc. Hence ice wines are often expensive and in small quantity. (The bottle of wine reviewed here is one of only 3000 produced at Soryu Winery that year).

This is a Freezing Wine (Katsunuma is way too hot to make real ice wines), which is an artificially made "ice wine". The grapes are frozen in freezers to create the ice.

Soryu Freezing Wine was my first ice (freezing) wine - because they're usually too expensive - and I was very impressed.

So impressed I bought a bottle home with me after the tasting at the winery.

Very sweet but not too cloying or sugary and delicious.
