This Kirin Junmaishu (麒麟 純米酒) from Kaetsu Brewery (下越酒造) is made from Gohyakumangoku (五百万石) rice polished down to 55%.
It has a nihonshudo (日本酒度) of +4 so should be fairly dry.

It's a clear sake with a very, very slight pale yellowy green colour.

It has a crispy, fresh nose that's subtle and light.

On the palate it's light, crisp and non-acidic. You really can't taste the alcohol. There is also a light sake, rice aftertase. Which strangely is unusual as although sake is obviously made from rice, you don't often (in my limited experience anyway) get much of a rice taste.

Overall this sake is crisp, fresh and drinkable.
