Ippongi Sake Brewery has been brewing sake in Katsuyama City since 1902 and is renowned for producing elegant and refined quality sake, and it's one of the top brands in Fukui Prefecture.

This Ippongi sake is made from Gohyakumangoku (五百万石) rice polished down to 68% (Honjouzo sake has to be milled down to at least 70%), and has a Nihonshudo of +2.5 (so is probably leaning towards the dry side).

It has a light nose and has a soft, pillowy feel in the mouth.

The sake has an interesting Umami (sometimes translated as "pleasant savory taste") flavour, and a slightly chalky powdery feel to it.

This is really drinkable, not too strong an alcohol taste, in fact I couldn't really feel the alcohol at all.

A very good, elegant, refined, quality, drinkable sake.
