This sake, bought in a little cafe in Sekigahara to go with my grilled eel, was crisp and fresh.
I had it cold (reishu) and really liked it.
It was a little sweet and had a short finish.

According to the Ozeki website, this sake has a Nihonshudo (Sake density/Sake Meter Value) of -0.5
The SMV is a measure of the sakes sweetness. A plus value is dry and minus is sweet. The bigger the number the more dry (or sweet) it is.

It also has an acidity value of 1.3 .

I've been looking in to this sake Brewery, Ozeki and apparently they have a big presence in America too. Although they're based in Nada, Japan and ave been there for nearly 300 years, in 1979 they opened up their American office in California.

"Ozeki were the first major sake brewer to begin prdouction in the United States" - according to their website, http://www.ozekisake.com.

Ozeki is a Sumo term. Now the highest sumo rank is Yokozuna but before this changed (in the late Edo period) the title was "Ozeki".
