I tasted this Daiginjo at the brewery in Nada and loved it.

As it's a Daiginjo it has no added brewers alcohol, and is made of rice and koji (the mold that creates the alcoholic goodness of sake) only. The rice (including the Yamada Nishiki variety) is polished down to at least 50%.

This sake has a Nihonshudo value of 1 which means it's neutral (neither sweet nor dry).

Bizarrely this had a taste of salami, and as I said earlier, I loved it.
I'm pretty sure I bought a bottle from the brewery after tasting it too.

I had bought a bottle of it (actually I believe my parents bought it for me when they visited last year and I gave them a tour of the local breweries). Anyway I tried this at home, warm (atsukan) and it was smooth, a little sweet with some acidity on the edges of the tongue.

Had hints of white chocolate and kind of a chocolatey cheese thing. Very drinkable.
