Sparkling sake doesn't seem to be made very often, or perhaps it doesn't last very long as it's not often you see it, and when I went to a sake tasting last year some breweries were advertising their sparkling sake's but you couldn't taste them as they hadn't brewed them yet (and they didn't have any from last years batch to sell or taste, so I assume they don't last long).
Will have to look into that.
Anyway, this came in a small bottle with a metal peel off cap and fizzed like it was a lemonade or something - as opposed to a sparkling wine.
It's made from Rice and Rice kouji (the mold used in sake production) and the bottle has lots of white cloudy sediment swirling around the bottom.
It's a clear sake, and very, very fizzy, but in the mouth it was very a very light and soft fizziness as opposed to a soda or fizzy soft drink.
It smelt like sake and the initial taste was of a normal sake but that soon faded to leave a slightly flat lemonade/soda kind of taste.
It was fairly sweet and very easy to drink, I finished this sake off much quicker than I would a normal sake bottle of equivalent size.
Will definitely look out for more sparkling sakes, and although it's not really a substitute for a sparkling wine or a champagne (as it's too much like a soft drink), it would make a nice change for a special occasion.
