Maturing Wine Underwater

Interesting little news article I found in today’s Daily Yomiuri (English language version of the Japanese newspaper).

Off license (liquor store) owner, Seiichi Hirai of Himeji and his partner have decided to try an experimental maturation technique with some sake and wine they have in their store.

Basically they are hanging 108 bottles of sake, and 48 bottles of wine under the sea off Murotsu Port in Tatsuno, Hyogo.

In May they packed them in crates and then hung them about 5 metres under the surface. The plan is to take them out in December and “hopefully” the sake and wine will have been “mellowed” by the waves and differences in water temperature, etc.

What a cool idea, but I wonder if it’ll work.

There’s a great picture to go with it of these crates hanging in the water like something from a shipwreck, but unfortunately I haven’t been able to find the article online at The Daily Yomiuri Online.

  3. There are two reason's why I don't think this will work.

    1. They are relying on changes in temperature.

    2. The motion of the ocean. (poet and don't know it)

    I believe it is best to maintain a constant temperature and to not move or stir up the wine while aging or storing.
